Meatless Monday: Mexican

I'm pretty pleased with our dinner tonight, even if I do say so myself-it was dee-licious. Sour cream enchiladas with Mexican rice and seasoned black beans. All that was missing was guacamole, because the Kroger, of all things, was out of avocados. Bummer.

  1. i love meatless enchiladas stuffed with borwn ruce and black beans! we have them once a week. :) how could kroger be out of avocados?! that's a crime!!!

    Would you mind praying for me...my injury has flared up again, but I am still planning on running the half. I am really nervous about the unknowns of what this injury is though and running. I have already made a sports ortho appt for next week. Fun.

  4. Yes, I used Pioneer Woman's recipe (sour cream enchiladas). No changes, except I used slightly more cumin. The first time I made them I used red sauce and the second time I used green sauce. Both were good.
