Meatless Monday, a week later

Last Monday was meatless, but I didn't have to cook! Friends from church invited us over to have an authentic Mexican meal, cooked by Geneva (the mom-my age and a new friend) and her daughter, Liz (in her 20s and whom we've known for a couple of years). Geneva speaks a little English; her husband, Uriel, speaks even less, but was lively and funny. Liz is bilingual (and her husband speaks English and German).

It was a fun evening trying to communicate with our broken high school Spanish and their halting English. Liz translated for us more than once as we heard about Geneva's and Uri's courtship (Geneva was 16 when they married!) and life together over the past 40 years.

The food was yummy-cheese enchiladas, mexican rice and beans. Plus, a Tres Leches Cake, made by Liz.

We enjoyed our time with them. Thankful for friends and fellowship and laughter.
